Mushrooms have a high water content and readily absorb more, so soaking before cooking is not recommended. Instead, clean mushrooms with a mushroom brush or wipe the cap and stem with a paper towel to loosen any pebbles or dirt. Store them in the refrigerator, uncovered or loosely wrapped in paper towels. Don’t keep them tightly wrapped in plastic, which holds in too much moisture and will lead to untimely spoilage.
