Summer squash has tender, edible skin that rarely needs peeling. Use zucchini and yellow squash interchangeably, or combine the two for color contrast.
Yellow summer squash
Shiny yellow skin elongated shape with bottom slightly more bulbous. Neck may be straight or slightly crooked. Pale yellow flesh with edible seeds.
Zucchini
Dark green, elongated squash. Pale green interior with edible seeds.
