Type Description
Acorn Squash Deeply ridged, round, slightly pointed on the bottom. Dark green skin with orange patches. Orange, somewhat stringy flesh. Classic sweet squash flavor.
Buttercup Squash Round shape, dark green skin. Sweet, slightly dry, smooth orange flesh. Very sweet.
Butternut Squash Shape resembles an oversized pear. Skin is beige. Flesh is bright orange, moist, very smooth and sweet.
Delicata Squash Small, oval squash. Pale yellow skin with green stripes. Dark, sweet, smooth orange flesh. Mild, slightly sweet.
Hubbard Squash Bumpy, greenish-gray skin. Sweet, yellow flesh. Often sold in wrapped, cut wedges because of its large size. Rich, sweet flavor.
Pumpkin Dark orange skin. Paler orange flesh. For cooking, choose sugar pumpkins, which have denser, smoother flesh. The more watery, stringy field pumpkins make good jack-o’-lanterns. Mild flavors.
Spaghetti Squash Large oval squash with pale yellow skin. Stringy, dark yellow to pale orange flesh separates into strands that resemble noodles. Neutral, mild flavor.
Sweet Dumplings Squash Similar to delicata, but shaped like a flattened pumpkin. Mild, sweet flavor.
