1. Heat oil in large nonstick skillet or Dutch oven over medium-high heat until hot. Add half of spinach cook and stir 1 to 2 minutes or until spinach starts to wilt.
2. Add remaining spinach cook and stir until wilted. Reduce heat cover and simmer 5 to 7 minutes or until tender.
3. With slotted spoon, place spinach in serving bowl. Add apple juice and nutmeg stir gently.
