1. Blend mayonnaise, whipped cream and 1 tablespoon lemon juice in a small bowl. Season to taste with nutmeg and mace.
2. Chop three of the pear halves, reserving the nicest ones for the garnish. Sprinkle chicken with salt and pepper blend into dressing with chopped pears and celery. Chill. Serve on lettuce garnish with remaining pears cut into wedges and sprinkle with almonds.
