Serves: 5
1. Salad greens should always be handled with tender loving care to avoid bruising.
2. Remove the core from iceberg lettuce and run cold water through the head. Drain well upside-down in a colander or on paper towels. Other types of greens should be separated into individual leaves, rinsed well, trimmed of coarse stems and drained well or spun in a lettuce basket.
3. The damp greens should be wrapped in paper towels and lightly packed in plastic bags. Refrigerate for several hours to crisp.
