Preheat oil over medium high heat. Peel plantains. Cut each plantain in half crosswise. Thinly slice each half into lengthwise pieces. Slide plantain pieces into hot oil. Fry until golden brown and tender.
Flip as needed. Drain on paper towels. Season with salt and pepper. Serve hot.
