1. Preheat deep fryer with vegetable oil. To check if the oil is to the correct temperature, drop a small cube of bread into the oil. If the oil sizzles and the bread turns golden, the oil is ready to use.
2. In a medium bowl, mix the egg whites, salt, cornflour and flour.
3. Coat the seafood selection in batter then deep fry for 2-4 minutes or until cooked crisp and golden.
4. Remove with a slotted spoon and drain on kitchen paper.
5. MAYONNAISE: In a food processor, blend the egg yolks, Dijon and sugar.
6. With the food processor still running, gradually add the oil until it thickens to consistency of mayonnaise.
7. Serve the deep-fried seafood selection with mayonnaise to the side. Garnish with lemon wedges.
NOTE: Pregnant women, babies, young children and the elderly are not advised to consume homemade mayonnaise as it contains raw egg.
