1 eggplant
2 eggs
1/2 teaspoon salt
Fresh bread crumbs
1 tablespoon Parmesan cheese
1/2 cup cornstarch
Oil for frying
1. Peel eggplant and slice into 1/4 inch slices.
2. Add salt to egg and beat.
3. Add cheese to breadcrumbs.
4. Dip eggplant slices into cornstarch and shake off excess.
5. Dip into egg.
6. Press breadcrumb onto slices.
7. Deep Fry till golden.
8. Salt to taste.
