Fish fillets
Flour, seasoned with Salt and Pepper
Egg wash (2 TBS cold water per beaten egg)
Bread crumbs or cracker crumbs
Vegetable oil
1. Wipe fish with a damp cloth or paper towel and cut fillets or steaks into serving sized pieces.
2. Roll fish in seasoned flour and dip into egg wash.
3. Roll in bread (or cracker) crumbs. For a thicker crust, coat twice with egg and crumbs.
4. Deep fry in hot oil (about 370°F) until golden brown. Drain and serve while still hot. For a variation, try coating the fish with Tabasco sauce or mustard before coating
