6 small sweet potatoes, peeled cooked until tender
2 tablespoons butter
1/3 cup sugar
1/2 teaspoon cinnamon
1 teaspoon salt
Marshmallows
Cornflakes crumbs
Oil for deep frying
Mash sweet potatoes; season with the butter, sugar, cinnamon and salt. Form into balls around each marshmallow, making sure marshmallow is completely covered. Chill for 3 to 4 hours. Roll croquettes in cornflake crumbs and fry in hot oil (360 to 375°). Drain and serve immediately.
