1 pound fresh or frozen scallops or 1 pt. shucked oysters
1/4 cup all purpose flour
1/4 teaspoon salt
Dash pepper
1 egg beaten
1 tablespoon water
2/3 cup fine dry bread crumbs
Oil for frying
Thaw scallops, if frozen. Drain oysters. Dry scallops or oysters with paper toweling.
Combine flour, salt and pepper. Roll scallops or oysters in flour mixture. Combine egg and water.
Dip flour coated seasoned in egg mixture, roll in bread crumbs.
In deep fryer, heat about 2 inches shortening or oil to 365 degrees. Fry scallops or oysters, a few at a time. In the hot fat for 2-3 minutes or until golden. Drain on paper toweling, keep warm in 325 degree oven while frying remaining scallops or oysters. Serve with lemon or lime wedges, if desired. Makes 4 servings.
