1. Place apricots in blender container. Blend at high speed until smooth. Or press apricots through fine strainer or food mill. Set aside.
2. Measure sugar and cornstarch into medium saucepan. Stir to combine. Stir in apricot mixture, half-and-half, and lemon juice. Cook over medium heat, stirring constantly, until bubbly and thickened. Refrigerate until thoroughly chilled or over night.
3. Just before serving, cut KELLOGG'S POP-TARTS pastries into 1-inch strips. Arrange on serving tray or in napkin-lined serving basket. Stir dip well and serve.
