1. In shallow dish combine bread crumbs, salt and pepper. Sprinkle water over crumbs. Mix to slightly moisten. In another shallow dish lightly beat egg. Dip cheese in egg, allowing excess to drip off. Coat both flat sides of cheese with crumb mixture, pressing crumbs into cheese.
2. In large nonstick skillet heat 2 teaspoons olive oil over medium-high heat. Add cheese pieces. Cook about 45 seconds or until light brown. Turn. Cook about 45 seconds more or until cheese feels quivery. Place on serving plates.
3. In small bowl lightly sprinkle herbs with vinegar and olive oil. Arrange over cheese. Serve with crackers.
