1. Heat oil in large skillet and sauté chicken 3-5 minutes. Remove chicken.
2. Add wine to skillet and scrape pan to deglaze. Add onions, celery, and ginger and sauté until wine is reduced by half, about 5 minutes.
3. Add water chestnuts and mushrooms and sauté 2 minutes.
4. Add seasonings and chicken, cover, and simmer 10 minutes.
5. Add snow peas and cook 5 more minutes.
