1. Combine water, chicken, celery, and onion in a medium saucepan and bring to a boil. Cover and simmer 1 1/2-2 hours to make broth.
2. Remove chicken and chop, discarding bones. Return chicken to broth.
3. Add remaining ingredients and bring to a boil.
4. Cover, reduce heat, and simmer 30-40 minutes or until vegetables are tender.
