1. Rinse and soak lentils for 1 hour.
2. Heat oil in medium skillet and sauté onion and garlic for 3-4 minutes. Add spices and sauté for 2 minutes.
3. Add drained lentils and sauté 5 minutes. Add water, cover and simmer about 1 hour. Add more water if necessary to keep lentils from sticking to the pan, but most of the water should be absorbed after 1 hour.
