Apple Filling:
Cook and stir 6 cups sliced apples with the sugar, thawed apple-juice concentrate, and lemon juice. Stir until boiling reduce heat. Cover and simmer for 5 minutes, stirring occasionally until fruit is almost tender. Combine 2 tablespoons cold water and 1 tablespoon cornstarch. Add to filling, cooking and stirring until thick and bubbly. Keep hot.
For topping:
Mix flour, sugar, baking powder, and cinnamon. Cut in butter until mixture looks like coarse crumbs. Combine egg and mil. Add to flour mixture. Stir just until moist.
Pour apple filling into an 8 x 8 x 2 baking dish. Drop topping into 6 equally-spaced mounds on top of the filling. Bake at 400 degrees for 20 to 25 minutes or until toothpick comes out clean. Top with vanilla ice milk, if desired.
*Diabetics may choose to omit the sugar and slightly increase the apple-juice concentrate in the filling and topping. Also slightly increase the flour in the topping to balance out the solids and liquids. Omit the ice milk.
