Be creative and colorful! Enjoy a variety of any of the following delicious vegetables:
Lettuce--looseleaf, romaine, butterhead, etc. Enjoy purple or yellow or green cabbage, slivered carrots, diced green or yellow or red peppers, tomatoes, cauliflower, broccoli, celery, onions, cucumbers, radishes, jicama, corn, peas, sprouts, beets, mushrooms, etc. Pineapple, apples, raisins, mandarin oranges, and cottage cheese also mix well with a beautiful array of vegetables. Top with your favorite lowfat or nonfat dressing. This recipe may or may not be a time-saver, depending on the number of vegetables you choose to cut up for your salad.
