Dissolve gelatin in 1 1/2 cups boiling water and let sit for 5 minutes. In a separate saucepan, bring juice concentrate and 3/4 cup water to a boil. Stir juice concentrate into softened gelatin until dissolved.
Stir in lemon juice and crushed pineapple. Refrigerate until the mixture is about half-set to a thick liquid consistency. Fold in oranges and bananas. Pour into glass cake dish or individual dessert dishes. Refrigerate until completely set. Refreshingly light! This recipe makes a marvelous dessert for everyone, including those with diabetes and a high resistance to fat loss. Eat it for dessert, never on an empty stomach.
Variations: Try this recipe with any complementary combination of fruits and fruit-juice concentrates.
