Use the Luscious Lasagna recipe and make the following changes instead of using ground beef, replace it with 1 cup sliced mushrooms, 1 cup sliced celery, and 1 cup very thinly sliced zucchini squash. Add these items to the sauce.
You can also add a 10-ounce package of spinach that has been cooked and very well drained to the egg and cheese mixture. This makes the dish very colorful and delicious!
