In a shallow bowl, beat together egg whites, salt, milk, vanilla, and cinnamon. Dip bread into egg mixture, coating both sides. Do not drench.
Heat skillet on medium heat until water droplets scatter. Spray with nonstick cooking spray, or grease with a very small amount of butter or oil. Cook bread on both sides until golden brown. Serve with syrup, fruit sauces, or fresh fruit and vanilla yogurt.
