Cream together pureéd beans, sugar, and egg whites. In a separate bowl mix the flour, baking powder, baking soda and the spices. Add the flour mixture alternately with the applesauce. Beat mixture well after each addition. Add rolled oats and mix well. Add raisins and chocolate chips, and drop by teaspoons on baking sheet sprayed with nonstick cooking spray. Bake at 375 degrees for 12 to 15 minutes. You may also bake them as a bar cookie. To do this, spread the dough evenly on a nonstick cooking-sprayed baking sheet. Follow baking instructions. Bake at 375 degrees for 25 to 30 minutes. Cool and cut into squares. Delicious!
*Purchase canned white beans or finely pureé them in your blender. Their consistency should be like thick wallpaper paste or creamed shortening and sugar. If too thick, add liquid from beans or water (1 to 3 tablespoons). If a cookie recipe calls for ½ cup butter, use 1 cup pureéd beans instead. The beans improve texture, increase fiber and nutrition, and greatly decrease fat. They do not affect the flavor of the cookies in the least. A wonderful new idea!
