Cook vegetables according to package directions. Drain and place in two microwave-safe bowls. Top each with 1/2 cup lowfat cottage cheese and butter- and sour-cream-flavored sprinkles. Microwave on high for 1 to 2 minutes. (Two tablespoons of fat free dairy sour cream is delicious mixed into the cottage cheese.)
*The mixed vegetables I like best for this recipe include pinto, kidney, and garbanzo beans mixed in with the vegetables.
