Heat all taco shells in a 250-degree oven while heating refried beans in a saucepan. After beans are thoroughly heated, season to taste with taco seasoning mix. Fill each taco shell about 1/4 to 1/3 full of beans. Then add 2 tablespoons cheese to large tacos and 2 teaspoons cheese to small tacos. Finish with lettuce, tomato, onion, salsa or picante sauce, and fat free sour cream. Both kids and adults love these.
Special Note: You may also decide to use extra-lean ground beef or extra-lean ground turkey in place of the beans. Or, you may choose to mix the beans with equal parts of extra-lean ground meat and season to taste. I prefer the taste of all beans. I like extra fat grams from the cheese, not the meat. Choose what you like best.
