Dice zucchini and set aside. Sauté onions in 1 teaspoon butter. Add zucchini and all other ingredients and cook until zucchini is tender. Mix all ingredients in blender until smooth. Add water to thin as desired. Heat thoroughly. This delicious soup may be topped with lowfat croutons, 2 tablespoons of Parmesan cheese, plain nonfat yogurt, or fat free dairy sour cream.
