Sift flour and measure. Place flour in mixing bowl. Add salt, spices, nuts, and raisins or chocolate chips. In a separate bowl, mix pureéd beans and sugar together, stirring very well. Stir soda into applesauce. Combine beaten egg whites, applesauce, and creamed mixture. Add dry ingredients and mix well. Drop by teaspoons onto a cookie sheet sprayed with nonstick cooking spray. Bake at 375 degrees for 12 to 15 minutes. Do not over-bake! Makes 4 ½ dozen.
*If you are diabetic, you may choose to replace the sugar with apple-juice concentrate and increase the flour to balance out the solids and liquids. Use raisins instead of chocolate chips and decrease the amount to 2/3 cup. Also use unsweetened applesauce.
