Mix sour cream, mayonnaise, salad dressing, salt, mustard, and pepper. Toss with cabbage. Then blend in pineapple, marshmallows, and lemon juice. Top with paprika. This delicious coleslaw may serve as both a fruit and a vegetable choice at a meal. A sandwich with whole-grain bread and lean meat (protein), along with a cool glass of water would complete this quick, delicious meal.
*Shredding Note: Place chopped cabbage in blender. Cover with water. Then cover with lid and blend on high drain completely. Or purchase cabbage that is already shredded as a time saver.
**If you are diabetic, hypoglycemic, or highly resistant to fat loss, you may choose to leave out the marshmallows.
