For cauliflower:
Heat 1 inch salted water (1/2 teaspoon salt to 1 cup water) to boiling. Add 1 head cauliflower. Cover and heat to boiling. Cook until tender whole, 20 to 25 minutes florets, 10 to 12 minutes--drain. Place in 9 x 9 x 2 casserole dish or glass baking dish.
For cheese sauce:
Heat butter over low heat until melted. Blend in flour, mustard, salt, and pepper. Cook over low heat, stirring constantly, until mixture is smooth and bubbly. Remove from heat and stir in milk. Heat until boiling, stirring constantly. Boil and stir 1 minute. Gradually stir in cheese and cook over low heat until melted. Pour over cauliflower.
*This 39 percent-fat recipe fits nicely into a meal that has an overall fat percentage of less than 20 percent. Remember that a "B" Choice main course or side dish is more nutritious and a better fat-loss food than a "B" Choice dessert.
