Beat eggs add salt stir in flour. Mix in 1/4 to 1/2 cup cold water, 2 teaspoons at a time. Knead until stiff and smooth. Roll out on floured surface. Roll up like a jelly roll and slice. Separate and dry. Add to boiling, skimmed broth, stirring with a fork to prevent sticking. Cook for 15 minutes or more on low heat, stirring very often.
