Beat together shortening and sugar until fluffy. Stir in vanilla. Combine flour, baking powder and salt and mix into creamed mixture alternately with milk. Stir in coconut. Fold in egg whites. Pour in greased and floured 9 x 13-inch baking dish. Bake at 350°F for 30 to 45 minutes or until there is no indention when touched lightly with finger. Cool. Top with Coconut Icing.
