Total Calories: 728
Beat butter and sugar until creamy. Beat in egg and vanilla until light and fluffy. Mix in flour and salt. Roll dough into balls the size of a walnut. Place 2 inches apart onto greased cookie sheets. Make deep indentation in center of each ball with thumb. Bake at 350°F for 10 to 15 minutes until just set. Let sit for two minutes. Remove from cookie sheet and cool. Fill centers with raspberry jam.
