Beat together butter and sugar in large mixing bowl until fluffy. Beat in eggs. Combine flour, salt and soda. Add alternately with buttermilk. Stir in lemon extract. Wash and grate the rind of the lemon. Stir in 1 teaspoon lemon rind, reserving remaining rind and lemon for frosting. Pour into greased and floured 9 x 13-inch baking pan. Bake at 325°F for 60 to 70 minutes or until a toothpick inserted in the center comes out clean. Cool and frost with Lemon Frosting.
