Combine chocolate chips, milk and rum extract in small saucepan. Melt on low heal, stirring frequently. Remove immediately from heat and stir until smooth. Beat egg whites until soft peaks form. Gradually add 1/4 cup sugar, beating for 1 minute. Set aside.
Beat together butter and 1/2 cup sugar. Add egg yolks and beat 1 minute. On low speed, mix in melted chocolate mixture until combined. Add cocoa and beat until mixed in. Gently fold egg whites into chocolate mixture. Spoon into 9 x 9-inch baking dish that has been coated with cooking spray. Bake at 300°F for 50 to 60 minutes or until a toothpick inserted in the center comes out almost clean. (You will want it to be slightly soft in the middle) To serve, cut the torte into squares. Spoon a couple tablespoons of custard in the bottom of a bowl. Place a piece of torte on top of the custard.
CUSTARD
Whisk together milk, eggs, sugar and salt in a heavy saucepan. Cook over medium heat, stirring frequently until bubbly and slightly thickened. Remove from heat and add vanilla. Cover with plastic wrap and refrigerate until cool.
