1. In medium bowl stir together egg, yogurt, mustard, lemon peel and tarragon. Stir in 1 cup of crackers. Add tuna and onions. Mix well. Cover and refrigerate at least 2 hours.
2. Shape tuna mixture into 18 cones or balls. In shallow dish place remaining crumbs. Roll croquettes in crumbs.
3. In Dutch oven heat 2 inches of oil to 365°F. Cook croquettes, a few at a time, in hot oil for 2 to 3 minutes or until golden brown, turning once. Drain on paper towels. Keep warm in 300°F oven while frying remaining croquettes. Serve with tartar sauce, if desired.
