DOUGH:
1. Sprinkle yeast over warm water.
2. Combine milk, butter and sugar in bowl and microwave until butter is melted.
3. Beat in eggs and salt.
4. Stir in 2 cups of flour until smooth. Stir in yeast.
5. Add remaining flour and stir until well blended.
6. Cover with towel and let raise for 30 minutes. Stir down. Cover with towel and put in refrigerator overnight.
7. To use immediately, cover counter liberally with flour. Dump dough on counter and then turn over to cover with flour before rolling out.
ROLLS:
1. Brown butter in small skillet over medium heat. Once butter has melted, watch carefully and at the first sight of brown, remove from heat.
2. In a small bowl mix together brown sugar and cinnamon.
3. Roll dough onto lightly floured counter and roll into a long, thin rectangle.
4. Drizzle half of browned butter onto dough. Use a piece of plastic wrap to spread it to cover the dough.
5. Spread brown sugar mixture evenly over dough and then top with shredded apples.
6. Roll dough from bottom to top, keeping dough tight against filling, seam side down.
7. Using a sharp knife, cut dough into 1 1/2-inch slices. Place on baking sheet lined with parchment paper or sprayed with cooking spray.
8. Drizzle remaining browned butter evenly over rolls. Cover with light kitchen towel and let rise for 30 minutes or until double in size. To speed rising time, put in warm oven.
9. Bake at 350° for 15 to 20 minutes or until bottoms are lightly browned.
ICING:
1. Beat together powdered sugar, softened butter, evaporated milk and maple extract until smooth.
2. Spoon over warm rolls.
