1. Combine sugar, flour cornstarch and salt into large saucepan. Gradually stir in half and half until smooth.
2. Cook over medium heat, stirring often, until mixture starts to boil and thickens.
3. Add a small amount of hot mixture into egg yolk and stir. Pour egg into pudding and continue to cook until mixtures comes to a boil again. Stir in vanilla.
4. Add rice, craisins, orange zest, and almonds, Pour into serving dishes and sprinkle with nutmeg and additional orange zest.
