1. Heat olive oil in large skillet.
2. Add onion and green peppers and cook until tender over medium-high heat, about 2 minutes.
3. Add hash browns, salt and pepper. Cover and cook about 7 to 10 minutes until hash browns are browned. Turnover and cook for another 5 minutes.
4. Sprinkle with cheese and cook until cheese is melted.
