1. Heat oven to 350°.
2. Whisk together milk, half and half, rum extract, brown sugar, cinnamon and eggs in large bowl.
3. Add bread cubes and pecans and stir until milk mixture is absorbed into bread.
4. Pour into 2-quart baking dish that has been sprayed with cooking spray.
5. Bake for 40 to 45 minutes or until a knife inserted in the center comes out clean.
6. Serve with maple syrup.
