1. Put warm water into crock (stone bowl) or other non-metal container. Sprinkle yeast over water and stir with wooden spoon until dissolved.
2. Add flour and sugar and stir until smooth.
3. Cover and set aside for 36 to 48 hours. Stir each time you pass by.
4. Cover and store in refrigerator. Never add anything to starter except the flour and water needed to keep it going.
DO NOT USE METAL SPOONS OR CONTAINERS.
Always replace what you take out by beating together equal amounts of flour and warm water. Stir into remaining batter. Let stand in warm place at least 5 hours before putting back into the refrigerator.
