1. Heat oil in skillet over medium heat. Add zucchini, onions and green pepper. Stir-fry for 2 or 3 minutes until tender.
2. Beat eggs, salt, pepper and 1/4 cup of the cheese in medium bowl with fork or wire whisk until well blended and pour into skillet. Cook, stirring occasionally, until eggs are soft but set.
3. Transfer to a deep-dish pie pan. Sprinkle with tomatoes and remaining cheese. Broil on high with top 6 inches from coil for 3 minutes or until top begins to brown.
