1. Heat oven to 400°.
2. Combine dry ingredients in large mixing bowl.
3. Whisk together egg, milk and oil and pour into dry ingredients, stirring just until dry ingredients are moistened.
4. Put a couple tablespoons batter in each greased muffin cup. Drop a spoonful of jam in the middle of the batter and then add another couple spoonfuls of batter until cup is 2/3 full.
5. Bake for 12 to 15 minutes or until muffins are golden brown.
