1. Heat olive oil in skillet over medium-high heat. Add vegetables and stir-fry for about 2 minutes.
2. Spray a 9 x 13-inch baking dish with cooking spray. Layer, vegetables, mozzarella cheese, ham and cheddar cheese in dish.
3. Whisk together eggs, milk, flour, salt and pepper. Pour over top.
4. Bake for 40 minutes or until a knife inserted in the center comes out clean. Let stand a few minutes before serving.
