1. Preheat ebelskiver pan over medium heat.
2. Measure dry ingredients in medium mixing bowl and stir.
3. Beat egg whites until stiff and set aside.
4. Add egg yolks and buttermilk to dry ingredients and beat until smooth.
5. Fold in egg whites.
6. Spray each hole with cooking spray or grease with butter.
7. Spoon batter into each hole, about 3/4 full.
8. Let cook until bubbles start forming around edges then gently flip over with a fork.
9. Cook other side for about 2 minutes or until centers are done.
10. Dip in melted butter and then sugar.
