1. Heat oven to 350°.
2. Whisk together eggs, milk and salt. Set aside.
3. Layer bread in bottom of 9 x 13-inch baking dish that has been coated with cooking spray.
4. Layer bacon and potatoes evenly over bread.
5. Pour milk mixture over potatoes.
6. Top with vegetables and sprinkle with cheese.
7. Bake for 30 to 40 minutes or until a knife inserted in the center comes out clean.
