1. Spray 9 x 13-inch baking dish with cooking spray.
2. Blend oats until a fine powder.
3. Whisk together eggs, rum extract, brown sugar, milk and cream.
4. Arrange bread cubes in prepared dish.
5. Add raisins, almonds and apple pie filling to bread and stir.
6. Stir in oats.
7. Refrigerate for at least a couple hours or overnight.
8. Bake at 350° for 55 minutes or until center is set.
9. Serve with additional half and half.
