1. Heat oven to 350°.
2. Pulse oats 5 or 6 times until coarse.
3. Combine oats, flour, brown sugar, baking powder, salt and lemon zest and stir until well mixed.
4. Whisk together egg and milk and stir into dry ingredients just until moistened.
5. Spoon into loaf pan that has been coated with cooking spray.
6. Bake for 40 to 50 minutes or until a toothpick inserted in center comes out clean.
7. Cool and slice in 3/4-inch slices for French toast.
