1. Heat olive oil in large skillet over medium-high heat. Add zucchini and stirfry for a couple minutes until crisp-tender.
2. Whisk eggs and stir in 1/2 cup of cheese, ham and tomatoes. Pour into skillet with zucchini and cover. Cook on medium heat until eggs are nearly set, about 5 to 7 minutes.
3. Sprinkle with cheese and cook for another 2 minutes until eggs are completely set. Cut into wedges.
