1. Heat oven to 350°.
2. Coat 6 muffin cups with cooking spray. Fill unused cups with a little water.
3. Combine eggs, flour, butter, cottage cheese, mozzarella cheese and Tabasco in a food processor or blender. Process until well blended.
4. Stir in spinach.
5. Line muffin tins with ham slices, pressing down with fingertips.
6. Pour about 1/3 cup egg mixture into each cup.
7. Bake 20 to 25 minutes, or until a wooden toothpick inserted in the center comes out clean.
