1. Whisk together eggs, milk, flour and vanilla.
2. Heat 10-inch skillet over medium-high heat and spray with cooking spray.
3. Pour 1/4 cup batter into pan and lift and rotate until batter coats bottom of pan.
4. Cook for about 30 to 40 seconds until edges start to turn brown. Carefully turn on other side. Cook for about 10 seconds. Pick up pan and turn upside down over plate so crepe will fall out.
5. Bring water and brown sugar to a boil in saucepan.
6. Mix cornstarch, cinnamon and nutmeg together. Add enough cold water to form a smooth paste. Whisk into water mixture, stirring until smooth, thick and bubbly.
7. Stir in apples and simmer for a few minutes until apples soften slightly. Stir in walnuts.
8. Spoon mixture onto one half of crepe. Fold over and top with another spoonful of apples.
